Lemon Tea Cake –The quintessential feature at any tea party, lemon tea cake is a delicious, sweet, tangy and feather like light sponge cake. Serve it with clotted cream or whipped cream along with berries and you can enjoy your afternoon tea party a tad bit more.

You can make a Lemon Pound Cake and garnish it with lemon curd or meringue. This is easy to make and it’s also quite fancy at the same time.

The batter made of eggs, sugar, butter and flour is mixed well with grated carrot, which softens up while cooking. The simple flavours of cinnamon powder, nutmeg and ginger powder can also be used here, if you opt to make it with spices.

Lemon tea cake – Recipe

Ingredients:
Butter                                                          100 grams
Sugar                                                            100 grams
Eggs                                      2
Flour                                                             100 grams
Lemon extract                       2 drops
Lemon zest                                               I Tbsp
Yellow colour (optional)                          4 drops
Baking powder                                          ¼ Tsp

Method:
– In a bowl, beat butter and sugar well enough that it doesn’t have lumps.
– Add the eggs in the mixture, one at a time until they are mixed properly with the butter and sugar.
– Add the lemon extract into the wet ingredients.
– Sift the flour and baking powder together.
– Add the dry ingredients into the wet ingredients. Mix all the ingredients well. Add lemon zest and mix it in the batter. Do not overbeat.
– Grease the pan, put the batter into the pan and bake it at 140 degrees Celsius for 30 minutes.

Once the cake is ready, keep it to cool. Serve it with fresh blueberries or cream cheese, whipped cream or even simple sugar and lemon juice fondant.
